This Mediterranean medley with grilled fish makes the perfect mid-week meal.
Even better: trout, aubergine, lemon and cherry tomatoes are all on offer at JJ Foodservice until August 25th.
What you need
2 aubergines, cubed
2 courgettes, chopped
1 red pepper, deseeded and chopped
200g cherry tomatoes, sliced
2 garlic cloves, crushed and chopped
1 red onion, diced
2 tbsp olive oil
1 tsp mixed herbs
4 x frozen trout fillets
What to do: Ratatouille
Heat two tbsp of olive oil in a pan
Fry the aubergine and courgette on a medium heat, until golden
Add the onion and garlic, stir for one minute. Season well
Add tomatoes and red pepper, stir until softened
Break up the tomatoes with the back of a spoon
Add the lemon, mixed herbs and an extra splash of olive oil
Reduce heat and simmer until vegetables are fully cooked through
TOP TIP: For a smokey kick, add a teaspoon of paprika while frying the veg
What to do: Trout
Preheat the oven to gas mark 180
Place trout on tray and season well
Add squeeze of lemon and drizzle of olive oil
Bake for 20 mins and serve with the ratatouille
