Chicken wings are a BBQ staple, loved for their finger-licking flavour. Whether you cover yours in tangy barbecue sauce, hot buffalo seasoning, or marinated in herbs and spices, chicken wings are a crowd-pleasing, cost-effective favourite.

 

Success Steps:

 

No one wants flabby wings on their plate. Slice your wings at the joint and trim the tips for easy, one-handed eating.


Simple Salt & Pepper Marinade (for 2kgs chicken wings):


  • 2 tsp black pepper

  • 2 tsp salt

  • 2 tsp paprika

  • 2 tsp mild curry powder

  • Good glug of extra virgin olive oil.

  • Marinade for 2 hours and grill on medium heat until cooked

 

Tip: If you're worried about undercooking the chicken, pre-cook it in the oven before finishing it on the grill.

 

Cypriot Style Lamb Skewers – Authentic Flavours!



 Grilled lamb holds a special place in Cypriot cuisine and is a must-have at any BBQ gathering. In Cypriot tradition, mastering the art of cooking a mouth-watering lamb "shish" (cubed, skewered, and grilled lamb) earns youngsters extra praise from the older generation. The goal?   • Dice boneless lamb shoulder or leg into 2-inch cubes. Skewer 5-7 cubes per stick and grill on medium heat, turning every 30 seconds until brown and crispy.


  • Recommended Marinade: Fresh lemon juice, oregano, mint, olive oil, garlic, and red onion. Marinade overnight for maximum flavour.

Success Steps:

 

• Slice the cheese into 2cm slices and place foil on the grill to prevent sticking.

 

• Place the cheese on the hot BBQ grill and keep turning as it cooks really quickly. Once you see golden to light brown griddle marks, they're ready.

 

• Moisten some wholemeal pita bread and grill until warm. Open them up and stuff with the grilled Cypriot cheese and sweet sliced tomatoes.

 

TIP: For an authentic touch, grill some black olives on foil alongside!
