Beautiful bagels

At JJ Food Service we love food and we love it even more when our staff and suppliers want to share their favourite recipes!

In January, we will be stocking bagels from New York Bakery – including a new cheese-topped variery. To get the menu ideas flowing, Marketing Manager Philippa Norton has offered us her top three bagel recipes below:


chicken-and-smashed-avocado-cheese-bagel

Chicken and Smashed Avocado

Prep Time: 6 minutes

Servings: 2

Ingredients

  1. 2 New York Bakery Co Cheese Bagels

  2. 1 smoked chicken breast, skin removed

  3. 1 ripe avocado

  4. ½ lime

  5. Pinch of salt and pepper

  6. 2 heaped tsp tomato paste

  7. 2 handfuls spinach

Method

  1. Halve the bagels and lightly toast.

  2. Scoop the flesh from the avocado and lightly mash with a fork. Squeeze in the juice from ½ a lime and season with salt and pepper.

  3. Slice the chicken breast into ½ cm slices

  4. Spread the bagel with the sundried tomato paste; top with the smashed avocado and sliced chicken.

  5. Finish with a layer of spinach, place the top of the bagel on top and gently squash down

Saucy Scrambled Eggs and Bacon

Prep Time

12 minutes

Servings: 1

Ingredients

  1. 1 New York Bakery Co Cheese Bagel

  2. 2 small eggs

  3. 1 tbsp double cream

  4. 1 knob of butter

  5. Pinch of salt and pepper

  6. 3 rashers of streaky bacon

  7. 2 tbsp ketchup

  8. 1 tsp harissa

Method

  1. Grill the bacon until golden brown and crispy.

  2. Whisk the eggs and double cream; season with a little salt and pepper.

  3. Melt a knob of butter in a small non-stick frying pan and cook the eggs over a low heat until only just cooked and still quite loose.

  4. Slice the bagel in half and lightly toast. Mix the ketchup with the harissa paste.

  5. Spread the bagel with the harissa ketchup, top with the eggs and crispy bacon; place the lid on top to serve.

Turkey, Brie and Cranberry

Serves: 1

Serve: Cold, closed

Ingredients

  1. 12g cranberry sauce (½ tbsp)

  2. 1 plain bagel (115g), sliced in half

  3. 25g brie, sliced

  4. 5g rocket leaves, washed stalks removed

  5. 30g roast turkey slices, torn into pieces

  6. 1 twist freshly ground black pepper

Spread most of the cranberry sauce onto the bottom of the bagel; follow with brie, rocket leaves then turkey.

Dot with remaining cranberry sauce, black pepper and finish with the bagel top.

Tip – lightly toast the bagel and add 6g precooked smoked streaky bacon, broken into pieces (2 rashers) and 2 medium fresh finely chopped fresh sage leaves to make the ultimate Christmas bagel! For a vegetarian option remove the turkey and bacon.
